Creamy Cilantro Lime Chicken is a flavorful and creamy dish that combines juicy chicken with a tangy lime and cilantro sauce. Here’s a simple recipe to make it:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Juice of 2 limes
  • 1 tablespoon lime zest
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • 1/2 teaspoon cumin (optional)
  • 1/2 teaspoon chili powder (optional)

Instructions:

  1. Prep the Chicken: Season the chicken breasts with salt, pepper, cumin, and chili powder (optional).
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
    • Remove the chicken from the skillet and set it aside.
  3. Make the Creamy Sauce:
    • In the same skillet, add minced garlic and cook for about 1 minute, until fragrant.
    • Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
    • Stir in the heavy cream, lime juice, and lime zest. Let the sauce simmer for 3-5 minutes until it thickens slightly.
  4. Add Cilantro: Stir in the chopped cilantro, and season with additional salt and pepper to taste.
  5. Combine the Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the creamy cilantro lime sauce over the top. Let the chicken simmer in the sauce for a couple more minutes to absorb the flavors.
  6. Serve: Garnish with extra cilantro and serve with rice, potatoes, or a side salad.

Enjoy this creamy and zesty chicken dish! You can also adjust the spice level by adding more chili powder or even a pinch of cayenne pepper.
