Decadent Caramel Cornflake Cream Pie

That sounds delicious! Here’s a recipe for a Decadent Caramel Cornflake Cream Pie that combines a creamy filling, sweet caramel, and crunchy cornflakes for a perfect dessert:

Ingredients:

For the crust:

  • 2 cups cornflakes
  • 1/4 cup unsalted butter, melted
  • 2 tbsp sugar

For the filling:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) tub of whipped topping (like Cool Whip)
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • Pinch of salt

For the caramel sauce:

  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract

Instructions:

1. Prepare the crust:

  • Preheat your oven to 350°F (175°C).
  • Crush the cornflakes into small pieces. You can do this by placing them in a plastic bag and crushing them with a rolling pin or by using a food processor.
  • In a bowl, mix the crushed cornflakes, melted butter, and sugar until well combined.
  • Press the mixture into the bottom of a 9-inch pie pan to form an even crust.
  • Bake for about 8-10 minutes, or until golden brown. Allow to cool completely before filling.

2. Make the filling:

  • In a large bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  • In a separate bowl, beat the heavy whipping cream with vanilla extract and a pinch of salt until soft peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until combined.
  • Fold in the whipped topping until the mixture is light and fluffy.

3. Make the caramel sauce:

  • In a small saucepan, melt the butter over medium heat.
  • Stir in the brown sugar and heavy cream. Bring to a simmer and cook, stirring constantly, for about 3-5 minutes, or until the sauce thickens slightly.
  • Remove from heat and stir in the vanilla extract. Let it cool for a few minutes before using.

4. Assemble the pie:

  • Spoon the creamy filling into the cooled cornflake crust, smoothing the top with a spatula.
  • Drizzle the warm caramel sauce over the top of the pie.
  • Refrigerate the pie for at least 4 hours, or overnight, to allow it to set.

5. Serve:

  • Just before serving, you can drizzle more caramel sauce on top or sprinkle extra crushed cornflakes for a crunchy topping.
