Ingredients:

For the Roasted Vegetables and Chickpeas:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper, to taste

For the Maple Dijon Tahini Dressing:

  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice (freshly squeezed)
  • 2 tbsp water (or more to thin)
  • Salt and pepper, to taste

Instructions:

1. Preheat the oven:

  • Preheat your oven to 400°F (200°C).

2. Prepare the vegetables and chickpeas:

  • In a large bowl, toss the diced sweet potato, bell pepper, and zucchini with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
  • Add the chickpeas and toss them as well until everything is evenly coated.

3. Roast the vegetables and chickpeas:

  • Spread the vegetables and chickpeas evenly on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly crispy around the edges. Be sure to stir everything halfway through.

4. Make the Maple Dijon Tahini Dressing:

  • While the veggies and chickpeas are roasting, whisk together the tahini, maple syrup, Dijon mustard, lemon juice, and water in a small bowl until smooth. Add salt and pepper to taste. Adjust the consistency by adding more water if needed.

5. Assemble the bowl:

  • Once the roasted veggies and chickpeas are done, remove them from the oven and let them cool slightly.
  • Divide the roasted vegetables and chickpeas between bowls.
  • Drizzle the Maple Dijon Tahini Dressing over the top and serve.

6. Optional toppings (for extra flavor):

  • Fresh herbs (parsley, cilantro, or basil)
  • Avocado slices
  • Toasted seeds or nuts (like pumpkin seeds or almonds)
