Soft & Tender No-Mixer Donuts

Here’s a simple and soft no-mixer donut recipe you can easily make at home. These donuts are light, fluffy, and require minimal effort!

Ingredients:

For the Donuts:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg (optional for flavor)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter (or vegetable oil)
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

For the Glaze (optional but recommended):

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

1. Prepare the Donut Dough:

  • In a large bowl, whisk together the flour, baking powder, salt, nutmeg, and sugar.
  • In a separate bowl, whisk the eggs, milk, melted butter (or oil), and vanilla extract together until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be slightly sticky but should hold together.

2. Shape the Donuts:

  • Lightly flour a clean surface and your hands, then gently knead the dough a few times until it comes together (don’t overwork it).
  • Roll out the dough to about 1/2-inch thickness using a rolling pin.
  • Using a donut cutter or two round cookie cutters (one larger and one smaller for the hole), cut out the donuts.

3. Fry the Donuts:

  • Heat vegetable oil in a deep pot or frying pan to about 350°F (175°C). Make sure the oil is deep enough to fully submerge the donuts.
  • Carefully drop the donuts into the hot oil, a few at a time. Fry until golden brown, about 1-2 minutes per side.
  • Use tongs or a slotted spoon to remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.

4. Glaze the Donuts (optional):

  • While the donuts are cooling slightly, make the glaze by whisking together the powdered sugar, milk, and vanilla extract in a bowl until smooth.
  • Dip each warm donut into the glaze, ensuring it’s evenly coated. Place the glazed donuts on a wire rack to allow the glaze to set.
