California Spaghetti Salad

Absolutely, California spaghetti salad is a delicious and refreshing dish. Here’s a simple and tasty recipe for you to try.Ingredients:

  • 8 ounces spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, or orange), diced
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Cook the spaghetti according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a large bowl, combine the cooked spaghetti, cherry tomatoes, cucumber, bell peppers, black olives, red onion, feta cheese, and parsley.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the spaghetti salad and toss gently to combine, ensuring the ingredients are evenly coated.
  5. Adjust the seasoning if necessary.
  6. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
