Morning Glory Baked Oats are a delicious, nutritious, and easy breakfast option. Here’s a simple recipe to make them:

Ingredients:

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup milk (dairy or non-dairy like almond or oat milk)
  • 1/4 cup maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1/2 cup shredded carrots
  • 1/2 cup chopped apple (peeled or unpeeled)
  • 1/4 cup raisins or currants (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup shredded coconut (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking dish with parchment paper.
  2. Mix the dry ingredients: In a large bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt.
  3. Prepare the wet ingredients: In another bowl, whisk together the eggs, milk, maple syrup (or honey), and vanilla extract until smooth.
  4. Add the mix-ins: Stir the shredded carrots, chopped apple, raisins, walnuts, and shredded coconut (if using) into the wet ingredients.
  5. Combine wet and dry: Pour the wet mixture into the dry ingredients and stir everything together until well combined.
  6. Pour into the baking dish: Spread the mixture evenly into the prepared baking dish.
  7. Bake: Place in the preheated oven and bake for about 30-35 minutes, or until the oats are set and lightly golden on top. A toothpick should come out clean from the center.
  8. Serve: Let it cool slightly before cutting into squares. You can enjoy it warm or at room temperature, topped with a dollop of yogurt, a drizzle of honey, or extra fruit!

Optional Add-ins:

  • Chia seeds or flaxseeds for extra fiber.
  • A splash of orange juice or zest for extra flavor.
  • Swap in other fruits like pears, bananas, or berries.

These baked oats are great for meal prep too! They keep well in the fridge for a few days or can be frozen for later. Enjoy!
