Ingredients:

For the pancakes:

  • 1/2 cup water (adjust to consistency)
  • 1/4 tsp salt
  • 1 egg (optional, for richness)
  • 1 tbsp sesame oil (for flavor)
  • 1-2 tbsp chopped green onions (scallions)

For the filling:

  • 1/2 cup cooked pork, chicken, or beef (shredded or ground)
  • 1/2 cup sautéed mushrooms (optional)
  • 1/4 cup finely chopped cabbage or bok choy
  • 1-2 tbsp hoisin sauce or oyster sauce
  • 1 tsp soy sauce
  • 1 tsp Chinese five-spice powder (optional)

For serving:

  • Soy sauce, hoisin sauce, or chili paste
  • Fresh cilantro or green onions for garnish

Directions:

  1. Prepare the pancake batter:
    • In a mixing bowl, combine the flour, salt, and water to form a smooth batter. If you want an extra fluffy pancake, beat in an egg. Add sesame oil and chopped green onions for extra flavor.
  2. Cook the pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with a little oil. Pour a thin layer of batter into the skillet and spread it out evenly.
    • Cook for about 2-3 minutes per side or until lightly golden and cooked through. Repeat until all the batter is used.
  3. Prepare the filling:
    • In a separate pan, sauté your choice of protein (pork, chicken, beef) with the vegetables. Add soy sauce, hoisin, or oyster sauce, and any additional seasonings like five-spice powder for depth of flavor.
    • Make sure everything is cooked through and well combined.
  4. Assemble the pancakes:
    • Once the pancakes are cooked, place a generous portion of the filling in the center of each pancake and fold or roll it up.
  5. Serve:
    • Drizzle with soy sauce, hoisin sauce, or your favorite spicy sauce. Garnish with fresh cilantro or extra green onions.
