stir-fried broccoli and carrots with chicken

Here’s a simple and tasty recipe for stir-fried broccoli, carrots, and chicken!

Ingredients:

  • 1 lb chicken breast or thigh, thinly sliced
  • 1 head of broccoli, cut into florets
  • 2 large carrots, julienned or thinly sliced
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced (optional)
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce (optional)
  • 1 tbsp honey or brown sugar (optional for sweetness)
  • 1 tbsp rice vinegar or lemon juice
  • 1/2 tsp red pepper flakes (optional, for a little heat)
  • Salt and pepper to taste
  • Cooked rice (for serving, optional)

Instructions:

  1. Prepare the ingredients:
    • Slice the chicken into thin strips or bite-sized pieces.
    • Cut the broccoli into small florets.
    • Peel and julienne the carrots or slice them thinly.
  2. Cook the chicken:
    • Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
    • Add the chicken slices to the pan and season with a pinch of salt and pepper.
    • Stir-fry for 4-5 minutes, or until the chicken is cooked through and lightly browned. Remove from the pan and set aside.
  3. Cook the vegetables:
    • In the same pan, add the remaining tablespoon of oil.
    • Add the garlic and ginger (if using), stirring for about 30 seconds until fragrant.
    • Add the carrots and stir-fry for 2-3 minutes, until they begin to soften.
    • Add the broccoli and continue stir-frying for another 3-4 minutes, until the vegetables are tender-crisp.
  4. Combine everything:
    • Return the cooked chicken to the pan.
    • Add the soy sauce, oyster sauce (if using), honey (if using), and rice vinegar (or lemon juice).
    • Stir everything together and cook for another 1-2 minutes, allowing the sauce to thicken slightly and the flavors to combine.
  5. Finish and serve:
    • Taste and adjust seasoning with extra salt, pepper, or red pepper flakes if desired.
    • Serve hot over rice (optional).
