Baked Rice Pudding Recipe

Here’s a simple and delicious recipe for baked rice pudding:

Ingredients:

  • 1 cup cooked rice (preferably short-grain or medium-grain)
  • 2 cups whole milk (or any milk of your choice)
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar (adjust to taste)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup raisins (optional)
  • Ground nutmeg (for garnish, optional)

Instructions:

  1. Preheat the oven to 325°F (160°C). Grease a 9×9-inch baking dish or any equivalent oven-safe dish.
  2. Cook the rice if you haven’t already. You can use leftover rice or cook fresh rice according to package instructions.
  3. Mix the ingredients: In a large mixing bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon, and salt until well combined.
  4. Add the rice and raisins: Stir the cooked rice into the milk mixture, ensuring the rice is evenly coated. If using raisins, fold them in as well.
  5. Transfer to the baking dish: Pour the rice mixture into the prepared baking dish and spread it out evenly.
  6. Bake: Place the dish in the preheated oven and bake for about 45 to 50 minutes, or until the pudding is set and the top is golden brown. You may want to stir halfway through to ensure even baking.
  7. Cool and serve: Once done, remove from the oven and allow the pudding to cool slightly before serving. Sprinkle with a little ground nutmeg or additional cinnamon if desired.
  8. Enjoy!: Serve warm or chilled, as per your preference.
