New York cheesecake is a rich and creamy dessert with a dense and smooth texture, often made with a graham cracker crust. It’s known for its tangy flavor, which comes from cream cheese as the main ingredient. Here’s a simple recipe to make a classic New York cheesecake:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 4 large eggs
  • 2/3 cup heavy cream
  • 2 tablespoons all-purpose flour

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Make the Crust:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
    • Press the mixture evenly into the bottom of the prepared pan.
    • Bake for 10 minutes, then set aside to cool while you prepare the filling.
  3. Prepare the Filling:
    • In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
    • Add the sugar and vanilla extract, and beat until well combined.
    • Add the sour cream and mix until incorporated.
    • Gradually add the eggs one at a time, mixing after each addition. Make sure to scrape down the sides of the bowl.
    • Mix in the heavy cream and flour until smooth and well combined.
  4. Bake the Cheesecake:
    • Pour the cheesecake batter into the cooled crust, spreading it evenly.
    • Bake for 45-50 minutes or until the edges are set but the center still slightly jiggles when you tap the pan.
    • Turn off the oven, leave the cheesecake inside for 1 hour with the oven door slightly ajar.
  5. Cool and Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature.
    • Refrigerate for at least 4 hours or overnight to set fully.
  6. Serve:
    • Once chilled, carefully remove the cheesecake from the springform pan.
    • Top with fresh berries, fruit compote, or a drizzle of caramel sauce if desired.
