Moist Chocolate Loaf Cake

Here’s a simple and delicious recipe for a Moist Chocolate Loaf Cake:

Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (240ml) buttermilk (or substitute with regular milk + 1 tbsp lemon juice or vinegar)
  • 1/2 cup (120ml) hot water
  • 1/2 cup (90g) semi-sweet chocolate chips (optional for extra richness)

Instructions:

  1. Preheat your oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes) using an electric mixer.
  4. Add eggs and vanilla: Beat in the eggs, one at a time, followed by the vanilla extract. Mix until fully incorporated.
  5. Alternate adding dry ingredients and buttermilk: Gradually add the dry ingredients to the wet mixture in thirds, alternating with the buttermilk. Start and finish with the dry ingredients. Mix until just combined—do not overmix.
  6. Add hot water: Slowly mix in the hot water to the batter. The batter will be thin, which is normal, and it helps make the cake moist.
  7. Fold in chocolate chips: If using, gently fold in the chocolate chips.
  8. Bake: Pour the batter into the prepared loaf pan and spread it out evenly. Bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. Serve and enjoy: Slice and enjoy the moist, rich chocolate loaf cake!

Optional:

  • You can drizzle the cake with melted chocolate or add a dusting of powdered sugar for an extra touch of sweetness.
  • For a richer flavor, try using sour cream or yogurt instead of buttermilk.

This cake is perfect for any chocolate lover and will stay moist for several days if stored in an airtight container!
