A Hawaiian Shrimp Poke Bowl with Sriracha Mayo is a delicious and flavorful dish that combines fresh, marinated shrimp with vibrant toppings, served over rice. The creamy, spicy sriracha mayo adds a perfect kick to balance the flavors. Here’s how you can make it:

Ingredients:

For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1/2 tsp grated ginger
  • 1 garlic clove, minced
  • 1 tbsp green onions, chopped
  • 1 tsp sesame seeds (optional)

For the Sriracha Mayo:

  • 1/4 cup mayonnaise
  • 1-2 tbsp sriracha sauce (adjust to your heat preference)
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • A pinch of salt

For the Bowl:

  • 2 cups sushi rice or jasmine rice, cooked
  • 1/2 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup edamame (optional)
  • Seaweed salad (optional)
  • Pickled ginger (optional)
  • Extra sesame seeds for garnish

Instructions:

1. Marinate the Shrimp:

  1. In a bowl, combine soy sauce, sesame oil, rice vinegar, honey (or brown sugar), grated ginger, minced garlic, and chopped green onions.
  2. Add the shrimp to the marinade and stir gently to coat. Let it marinate in the fridge for at least 15-30 minutes.

2. Make the Sriracha Mayo:

  1. In a small bowl, mix the mayonnaise, sriracha sauce, rice vinegar, sesame oil, and a pinch of salt.
  2. Adjust the sriracha depending on how spicy you like it.

3. Assemble the Bowl:

  1. Cook your rice and divide it evenly into serving bowls.
  2. Once the shrimp has marinated, briefly sauté them in a pan over medium heat for 2-3 minutes until pink and cooked through, or you can keep them raw for a more traditional poke bowl approach.
  3. Arrange the shrimp on top of the rice.
  4. Add avocado slices, cucumber, shredded carrots, and edamame around the shrimp.
  5. Drizzle the sriracha mayo over the bowl.
  6. Garnish with sesame seeds, seaweed salad, and pickled ginger if desired.

Tips:

  • Feel free to swap out the shrimp for other proteins like tuna, salmon, or tofu.
  • You can make the bowl your own by adding other toppings like mango, radishes, or roasted sweet potatoes.
  • Adjust the amount of sriracha mayo to control the heat level!
