Grilled Lamb with Brown Sugar Glaze sounds like a delicious dish! Here’s a simple recipe you can follow to prepare it:

Ingredients:

  • 2 lbs lamb chops or rack of lamb
  • 1/4 cup brown sugar (packed)
  • 1/4 cup balsamic vinegar or red wine vinegar
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1-2 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped (optional)
  • 1/2 tsp black pepper
  • Salt to taste

Instructions:

  1. Prepare the Glaze:
    • In a small saucepan over medium heat, combine the brown sugar, balsamic vinegar (or red wine vinegar), olive oil, soy sauce, Dijon mustard, garlic, rosemary, black pepper, and a pinch of salt.
    • Stir occasionally and let the mixture simmer for about 5-7 minutes, or until it thickens to a syrupy consistency. Remove from heat and set aside to cool slightly.
  2. Prepare the Lamb:
    • Pat the lamb chops or rack of lamb dry with paper towels.
    • Season the lamb generously with salt and black pepper on both sides.
  3. Grill the Lamb:
    • Preheat your grill to medium-high heat (about 400°F or 200°C).
    • Place the lamb chops on the grill and cook for 4-5 minutes per side, or until they reach your desired level of doneness (medium-rare is about 130°F or 54°C internal temperature).
  4. Glaze the Lamb:
    • During the last 2 minutes of grilling, brush the lamb with the brown sugar glaze on both sides.
    • Allow the glaze to caramelize slightly but be careful not to burn it.
  5. Serve:
    • Once the lamb is grilled and the glaze has formed a nice coat, remove from the grill and let it rest for a few minutes before serving.
    • Optionally, drizzle a bit more of the brown sugar glaze over the lamb before serving.

Tips:

  • For a smoky flavor, you can add some wood chips to your grill (if using a charcoal or gas grill) or use a smoker.
  • If you prefer a spicier kick, you can add a pinch of red pepper flakes to the glaze.
