Creamy Mushroom Chicken Thighs Recipe

Here’s a delicious recipe for Creamy Mushroom Chicken Thighs that’s easy to make and full of flavor!

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or boneless, if preferred)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms (button or cremini), sliced
  • 1 teaspoon thyme (fresh or dried)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional for extra richness)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken thighs with salt and pepper on both sides.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs, skin-side down.
    • Sear the chicken for 5-7 minutes per side until golden brown and crispy. Once done, remove the chicken from the skillet and set it aside.
  3. Sauté Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté until softened, about 2-3 minutes.
    • Add the minced garlic and sliced mushrooms. Sauté for another 5 minutes, until the mushrooms release their moisture and become tender.
  4. Make the Sauce:
    • Sprinkle the thyme over the mushrooms and stir in the chicken broth. Let it simmer for 2 minutes, scraping up any browned bits from the bottom of the skillet.
    • Reduce the heat to medium-low, then add the heavy cream and stir to combine. Let it simmer for another 3-4 minutes, allowing the sauce to thicken slightly.
  5. Combine Chicken and Sauce:
    • Return the seared chicken thighs to the skillet, skin-side up. Spoon some of the mushroom sauce over the chicken.
    • Cover and let it simmer for 10-15 minutes, or until the chicken is fully cooked through (internal temperature should be 165°F or 74°C).
  6. Finish the Sauce (Optional):
    • For a richer sauce, stir in grated Parmesan cheese and let it melt into the sauce, making it extra creamy.
  7. Serve:
    • Garnish with fresh parsley and serve the creamy mushroom chicken thighs with mashed potatoes, rice, or a side of your choice.
