Crispy Bacon-Wrapped Potato Bites
These crispy bacon-wrapped potato bites are a delicious and savory appetizer or side dish that is easy to make and sure to impress your guests!
Ingredients:
- 12 baby potatoes (or small Yukon gold potatoes)
- 12 slices of bacon (preferably thin-cut)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (optional for extra flavor)
- Salt and pepper to taste
- Fresh parsley (for garnish, optional)
- Toothpicks (for securing bacon)
Instructions:
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Prepare the potatoes: Wash and scrub the baby potatoes. Cut each potato in half (or into quarters if larger). Place the potato halves in a large pot of water and bring to a boil. Let them cook for 8-10 minutes, or until they are slightly tender but not fully cooked. You want them to still hold their shape. Drain and let them cool for a few minutes.
- Season the potatoes: In a bowl, toss the cooked potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until well-coated.
- Wrap with bacon: Cut the bacon slices in half so you have 24 shorter pieces. Wrap each potato half with a slice of bacon, securing it with a toothpick. If the bacon slices are long, you can also use one piece for two potato halves. Place the wrapped potatoes on a baking sheet lined with parchment paper or a wire rack for crispiness.
- Bake the potato bites: Bake for 20-25 minutes or until the bacon is crispy and golden brown, and the potatoes are tender. For extra crispiness, you can broil them for an additional 1-2 minutes at the end (watch carefully to avoid burning).
- Serve: Once done, remove the toothpicks and garnish the bacon-wrapped potato bites with fresh parsley, if desired. Serve hot and enjoy!
