Molhadinho prestige cake

A “Molhadinho” Prestige Cake is a popular Brazilian dessert that combines a moist, fluffy chocolate cake with a rich coconut filling, often topped with chocolate glaze. The “Prestige” name comes from the well-known Brazilian coconut-chocolate candy, which the cake resembles in flavor and texture.

Here’s how you can prepare a Molhadinho Prestige Cake:

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup milk
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon cocoa powder
  • 1 tablespoon baking powder
  • A pinch of salt
  • 1 teaspoon vanilla extract

For the coconut filling:

  • 2 cups shredded coconut (preferably unsweetened)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

For the chocolate ganache topping:

  • 200 g (7 oz) semisweet or milk chocolate
  • ½ cup heavy cream

Instructions:

1. Prepare the cake:

  1. Preheat your oven to 350°F (175°C) and grease and flour a round or rectangular cake pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, salt, and baking powder.
  3. In another bowl, whisk eggs, milk, vegetable oil, and vanilla extract together.
  4. Gradually add the wet ingredients to the dry ingredients and mix until smooth.
  5. Pour the batter into the prepared cake pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely before removing it from the pan.

2. Prepare the coconut filling:

  1. In a saucepan over medium heat, combine the shredded coconut, sweetened condensed milk, and heavy cream.
  2. Cook, stirring constantly, until the mixture thickens and becomes sticky (about 10-15 minutes).
  3. Remove from heat and add vanilla extract. Let it cool down to room temperature.

3. Prepare the chocolate ganache:

  1. Heat the heavy cream in a saucepan until it just begins to simmer (don’t let it boil).
  2. Remove from heat and pour over chopped chocolate. Let it sit for 1-2 minutes, then stir until smooth.

4. Assemble the cake:

  1. Once the cake has cooled, slice it into two or three layers, depending on your preference.
  2. Spread the coconut filling evenly between the layers.
  3. Pour the chocolate ganache over the top layer of the cake, letting it drip down the sides.
  4. Allow the ganache to set for a few minutes before serving.
