Colorful veggie sushi rolls are a vibrant and healthy option, perfect for those looking for a vegetarian or plant-based sushi experience. Here’s a simple recipe for making them at home:

Ingredients:

  • Sushi rice (1 cup)
  • Rice vinegar (2 tbsp)
  • Sugar (1 tbsp)
  • Salt (1/2 tsp)
  • Nori sheets (seaweed)
  • Vegetables (cut into thin strips):
    • Avocado
    • Carrot (julienned)
    • Cucumber (julienned)
    • Bell pepper (any color, julienned)
    • Radish (thinly sliced, optional)
    • Purple cabbage (shredded, optional)
  • Soy sauce (for dipping)
  • Pickled ginger (optional)
  • Wasabi (optional)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Prepare the Sushi Rice:
    • Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to package instructions.
    • Once the rice is done, stir in 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt. Let the rice cool to room temperature.
  2. Prepare the Vegetables:
    • Thinly slice all the vegetables into long strips. For a vibrant effect, choose vegetables with contrasting colors, such as orange carrots, green cucumber, and red bell peppers.
  3. Assemble the Rolls:
    • Lay a bamboo sushi rolling mat on a flat surface. Place a sheet of nori on top, shiny side down.
    • With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top of the nori sheet.
    • Arrange the vegetable strips horizontally in the center of the rice.
  4. Roll the Sushi:
    • Gently lift the bamboo mat from the bottom and start rolling it tightly, pressing gently as you go. Once you reach the exposed edge of the nori, wet it with a little water to seal the roll.
  5. Slice the Rolls:
    • Using a sharp knife, slice the roll into bite-sized pieces. Wet the knife between cuts to prevent the rice from sticking.
  6. Serve:
    • Arrange the sushi rolls on a plate and garnish with sesame seeds if desired.
    • Serve with soy sauce, pickled ginger, and wasabi.

Tips:

  • For extra flavor, you can add a thin layer of cream cheese or hummus inside the rolls.
  • You can also experiment with other veggies like zucchini, sweet potato, or spinach.
  • Make sure to use a sharp knife to slice the rolls neatly and avoid squishing them.
