A Smoked Sausage and Potato Bake is a hearty and delicious dish that combines savory smoked sausage with tender potatoes, often enhanced with vegetables and seasonings. Here’s a simple recipe for you to try:

Ingredients:

  • 1 lb smoked sausage (sliced into ¼-inch thick rounds)
  • 4-5 medium potatoes (peeled and sliced thinly)
  • 1 large onion (diced)
  • 2 bell peppers (sliced)
  • 3 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes: Slice the potatoes into thin rounds (about ¼ inch). This ensures they cook evenly.
  3. Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced onions, bell peppers, and garlic. Cook for about 5 minutes, stirring occasionally, until the onions soften.
  4. Combine ingredients: In a large baking dish, layer the sliced potatoes, sautéed vegetables, and smoked sausage. Season with paprika, thyme, oregano, salt, and pepper. Toss everything together to evenly coat the ingredients in the seasonings.
  5. Bake the dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 40-45 minutes or until the potatoes are tender when pierced with a fork.
  6. Add cheese: After 40-45 minutes, remove the foil and sprinkle the shredded cheese on top of the bake. Return the dish to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  7. Garnish and serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley or chives if desired, and serve hot!

Optional variations:

  • Add other vegetables like carrots or zucchini for extra flavor.
  • Swap the smoked sausage for another type of sausage, such as Italian or bratwurst.
  • For a creamy version, mix in some sour cream or heavy cream before baking.
