Chicken Tikka Rice Stir-fry

Chicken Tikka Rice Stir-fry is a flavorful and vibrant dish that combines the aromatic spices of Chicken Tikka with the comforting texture of stir-fried rice. Here’s a simple recipe to make it:

Ingredients:

  • Chicken Marinade:
    • 500g chicken breast or thighs, cut into bite-sized pieces
    • 2 tbsp plain yogurt
    • 1 tbsp lemon juice
    • 1 tbsp garam masala
    • 1 tbsp ground cumin
    • 1 tsp turmeric
    • 1 tsp paprika or Kashmiri red chili powder
    • 1 tsp ground coriander
    • Salt and pepper, to taste
  • Stir-Fry:
    • 2 tbsp vegetable oil (or ghee)
    • 1 medium onion, thinly sliced
    • 2 garlic cloves, minced
    • 1 bell pepper, diced
    • 1/2 cup peas (fresh or frozen)
    • 2 cups cooked rice (preferably cold, leftover rice works best)
    • 1/2 tsp ground cumin
    • 1/2 tsp turmeric
    • 1/2 tsp garam masala
    • Salt and pepper, to taste
    • Fresh cilantro, chopped (for garnish)
    • Lemon wedges (optional, for serving)

Instructions:

  1. Marinate the chicken:
    • In a bowl, combine yogurt, lemon juice, garam masala, cumin, turmeric, paprika, coriander, salt, and pepper. Add the chicken pieces and mix well to coat them. Cover and refrigerate for at least 30 minutes, or preferably a few hours for maximum flavor.
  2. Cook the chicken:
    • Heat a grill pan or skillet over medium-high heat and add a bit of oil. Cook the marinated chicken for 6-8 minutes, turning occasionally, until fully cooked and slightly charred. Set aside.
  3. Prepare the stir-fry:
    • In a large pan or wok, heat the vegetable oil over medium heat. Add the sliced onions and cook until soft and golden brown, about 4-5 minutes.
    • Add the garlic and bell pepper, cooking for another 2-3 minutes until fragrant.
    • Add the cooked rice to the pan, breaking up any clumps. Stir in cumin, turmeric, and garam masala. Cook for 5-7 minutes, ensuring the rice is heated through and coated with the spices.
  4. Combine:
    • Stir in the cooked chicken pieces and peas, mixing everything together. Cook for an additional 2-3 minutes to warm through.
  5. Serve:
    • Garnish with fresh cilantro and serve with lemon wedges on the side for added freshness and zest.
