Grilled Sausages with Peppers and Mashed Potatoes

Grilled Sausages with Peppers and Mashed Potatoes is a hearty and delicious meal! Here’s a simple recipe you can follow to prepare this dish:

Ingredients:

For the Grilled Sausages:

  • 4 sausages (your choice of type: pork, chicken, or vegetarian)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Peppers:

  • 2 bell peppers (red, yellow, or green), sliced
  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Salt and pepper, to taste

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • 1/2 cup milk (or heavy cream for richer potatoes)
  • Salt and pepper, to taste

Instructions:

1. Grilled Sausages:

  • Preheat your grill or grill pan to medium-high heat.
  • Brush the sausages with olive oil and season with salt and pepper.
  • Grill the sausages for about 8-10 minutes, turning occasionally, until they are cooked through and have nice grill marks. (Cooking time may vary depending on the size of the sausages.)

2. Peppers and Onions:

  • While the sausages are grilling, heat olive oil in a skillet over medium heat.
  • Add the sliced onions and peppers, and sauté for about 5-7 minutes, stirring occasionally, until softened and lightly browned.
  • Add a splash of balsamic vinegar (optional) to enhance the flavor. Season with salt and pepper to taste, then set aside.

3. Mashed Potatoes:

  • Bring a large pot of salted water to a boil, then add the potatoes.
  • Boil the potatoes for 10-15 minutes or until they are tender and easily pierced with a fork.
  • Drain the potatoes and return them to the pot.
  • Add the butter, and begin mashing the potatoes with a potato masher. Gradually add the milk (or cream) until you reach your desired consistency.
  • Season with salt and pepper to taste.

4. Assemble the Dish:

  • Serve the grilled sausages on plates with a generous portion of mashed potatoes on the side.
  • Spoon the sautéed peppers and onions over the sausages or beside them.
  • Garnish with fresh herbs like parsley if desired.
