Smoky Cheesy Jalapeño Chicken Rolls

These Smoky Cheesy Jalapeño Chicken Rolls are a delicious combination of tender chicken, creamy cheese, and spicy jalapeños, all wrapped up and baked to perfection. Here’s a recipe to make them:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 jalapeños (seeded and finely chopped, or to taste)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for searing)
  • 1/2 cup breadcrumbs (for coating)
  • 1/4 cup grated Parmesan cheese
  • Fresh cilantro or parsley (for garnish, optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness, about 1/2 inch thick, using a meat mallet or rolling pin.
    • Season the chicken with salt, pepper, and smoked paprika on both sides.
  3. Make the Filling:
    • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapeños, garlic powder, smoked paprika, and a pinch of salt and pepper.
    • Mix everything together until smooth and well incorporated.
  4. Assemble the Rolls:
    • Place a generous amount of the cheesy jalapeño mixture in the center of each chicken breast.
    • Roll up each chicken breast tightly, securing the ends with toothpicks if needed.
  5. Coat the Chicken Rolls:
    • In a shallow dish, combine the breadcrumbs and grated Parmesan cheese.
    • Roll each chicken roll in the breadcrumb mixture, pressing gently to coat evenly.
  6. Sear the Chicken:
    • Heat the olive oil in a large oven-safe skillet over medium-high heat.
    • Once the skillet is hot, sear the chicken rolls for about 2-3 minutes on each side, until golden brown.
  7. Bake the Chicken:
    • Transfer the skillet to the preheated oven and bake the chicken for about 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C) and the cheese is melted.
  8. Serve:
    • Remove the toothpicks from the chicken rolls.
    • Garnish with fresh cilantro or parsley, if desired.
    • Serve with a side of rice, roasted vegetables, or a fresh salad.
