Chicken Spinach and Mushroom Low-Carb Bake

Here’s a simple and delicious recipe for Chicken Spinach and Mushroom Low-Carb Bake that’s packed with flavor while keeping carbs in check!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cups mushrooms, sliced (white or cremini)
  • 3 cups fresh spinach, roughly chopped
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 cup shredded mozzarella cheese (or cheddar, if preferred)
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper, to taste
  • 1 tablespoon butter (for greasing the baking dish)

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.

2. Prepare the Chicken:

  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder. You can optionally sear the chicken breasts in a skillet with a little olive oil for 2-3 minutes per side to add flavor and color, but this step is optional.

3. Cook the Vegetables:

  • In the same skillet, add the remaining olive oil. Once hot, sauté the onions over medium heat until soft, about 3-4 minutes.
  • Add the sliced mushrooms and cook until they release their moisture and begin to brown, around 5 minutes.
  • Stir in the spinach and cook for another 2-3 minutes, just until the spinach wilts.

4. Assemble the Bake:

  • Place the chicken breasts in the prepared baking dish.
  • Spread the cooked vegetables (onions, mushrooms, and spinach) evenly over the chicken breasts.
  • In a mixing bowl, combine the heavy cream, mozzarella cheese, Parmesan cheese, thyme, and a pinch of salt and pepper. Pour this creamy mixture over the chicken and vegetables.

5. Bake:

  • Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C), and the top is golden brown and bubbly.

6. Serve:

  • Remove from the oven and let rest for a few minutes before serving. This dish pairs well with a side of roasted veggies or a fresh green salad.
