STUFFED POTATOES

Here’s a delicious Stuffed Potatoes recipe that you can make with simple ingredients:

Ingredients:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or any cheese of your choice)
  • 1/2 cup sour cream
  • 1/4 cup milk or cream
  • 1/2 cup cooked bacon bits (optional)
  • 1/4 cup chopped green onions or chives
  • 1/4 cup butter
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)

Instructions:

1. Bake the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • Scrub the potatoes under cold water to remove dirt. Dry them with a towel.
  • Poke several holes in each potato with a fork.
  • Rub the potatoes with olive oil and sprinkle with salt and pepper.
  • Place the potatoes directly on the oven rack (or a baking sheet) and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.

2. Prepare the Filling:

  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  • Slice each potato in half lengthwise.
  • Using a spoon, carefully scoop out the flesh of each potato, leaving about 1/4 inch of the potato skin intact to form a shell.
  • Place the scooped-out potato flesh into a large bowl.

3. Make the Potato Mixture:

  • Mash the scooped-out potato with a fork or potato masher.
  • Add butter, sour cream, milk (or cream), and season with salt, pepper, garlic powder, and paprika. Mash everything together until smooth and creamy.
  • Stir in the shredded cheese, cooked bacon bits (optional), and chopped green onions or chives.

4. Stuff the Potatoes:

  • Carefully spoon the mashed potato mixture back into the potato skins, packing it in lightly.
  • Sprinkle the top with more shredded cheese if desired.

5. Bake Again:

  • Place the stuffed potatoes on a baking sheet.
  • Bake at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and the potatoes are heated through.

6. Serve:

  • Once done, remove from the oven and garnish with extra green onions, bacon bits, or a dollop of sour cream.
  • Serve hot as a side dish or a main course.

Tips:

  • You can customize your stuffed potatoes with toppings like sautéed mushrooms, shredded chicken, or chili.
  • For a healthier version, substitute sour cream with Greek yogurt and use reduced-fat cheese.
