Here’s a recipe for Oreo Pancakes with Cream Cheese Drizzle that will make your breakfast extra indulgent!

Oreo Pancakes

Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 8-10 Oreo cookies, crushed into pieces

Cream Cheese Drizzle

Ingredients:

  • 4 oz cream cheese (softened)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (or more to adjust consistency)

Instructions:

For the Pancakes:

  1. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Prepare the wet ingredients: In a separate bowl, beat the egg, then add the buttermilk, melted butter, and vanilla extract. Stir well to combine.
  3. Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.
  4. Add the Oreo pieces: Gently fold in the crushed Oreo cookies.
  5. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles start to form on the surface (about 2-3 minutes), then flip and cook the other side for another 1-2 minutes until golden brown. Repeat until all pancakes are cooked.

For the Cream Cheese Drizzle:

  1. Mix the cream cheese: In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla: Stir in the powdered sugar and vanilla extract.
  3. Thin with milk: Gradually add milk, one tablespoon at a time, until the drizzle reaches your desired consistency.
