Skillet Chicken and Zucchini

Skillet Chicken and Zucchini is a delicious, healthy, and easy-to-make dish. Here’s a simple recipe for preparing it:

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs, if preferred)
  • 2 medium zucchinis, sliced into rounds
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice (optional)
  • Fresh herbs (such as parsley or basil) for garnish (optional)

Instructions:

  1. Prepare the Chicken:
    • Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, paprika, and oregano. You can use a mallet to lightly flatten the chicken if you want even cooking.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts to the pan. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown on the outside.
    • Once cooked, remove the chicken from the skillet and set it aside.
  3. Cook the Zucchini:
    • In the same skillet, add a little more oil if necessary and toss in the zucchini slices.
    • Cook for about 5 minutes, stirring occasionally, until the zucchini becomes tender and starts to brown slightly.
    • Season the zucchini with salt and pepper to taste. If desired, add a squeeze of fresh lemon juice to brighten the flavor.
  4. Combine and Serve:
    • Place the chicken back into the skillet with the zucchini to reheat for 2-3 minutes.
    • Optionally, garnish with fresh herbs like parsley or basil before serving.

Tips:

  • You can add other vegetables like bell peppers or cherry tomatoes for more color and flavor.
  • To make it a complete meal, serve with a side of quinoa, rice, or a light salad.
