PASTA AND GROUND BEEF

Ingredients:

  • 8 oz pasta (any type like penne, spaghetti, or rotini)
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1/2 cup beef broth or water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a bit of spice)
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain and set aside.
  2. Brown the Ground Beef: While the pasta cooks, heat a tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes). Drain any excess fat.
  3. Sauté Onions and Garlic: Add the diced onion to the pan with the beef and cook for about 3-4 minutes, until softened. Add the minced garlic and cook for another minute, stirring to prevent burning.
  4. Add the Tomatoes and Seasonings: Stir in the diced tomatoes (with juices), tomato paste, beef broth, oregano, basil, and red pepper flakes. Bring the mixture to a simmer. Let it cook for 10 minutes to combine the flavors, stirring occasionally. Season with salt and pepper to taste.
  5. Combine with Pasta: Add the cooked pasta to the skillet with the beef sauce. Stir well to coat the pasta with the sauce. Let it cook together for another 2-3 minutes.
  6. Serve: Spoon the pasta and beef mixture onto plates. Top with grated Parmesan cheese if desired.

Variations:

  • Add veggies: You can include some bell peppers, mushrooms, or zucchini when cooking the onions and garlic.
  • Cheesy version: After combining the pasta and beef sauce, sprinkle shredded mozzarella cheese over the top and broil for 2-3 minutes until melted.

This dish is hearty and flavorful, perfect for a comforting meal!
