Here’s a delicious recipe for Homemade Pineapple Nut Bars:

Ingredients:

For the Bars:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple (drained well)
  • 1/4 cup chopped nuts (such as walnuts, pecans, or almonds)

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon pineapple juice (from the crushed pineapple)
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan with parchment paper.
  2. Prepare the Dry Ingredients: In a medium-sized bowl, whisk together the flour, oats, shredded coconut, baking soda, and salt. Set aside.
  3. Make the Dough: In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until well combined.
  5. Add Pineapple and Nuts: Fold in the drained crushed pineapple and chopped nuts until evenly distributed.
  6. Bake the Bars: Pour the batter into the prepared baking pan and spread it out evenly. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool the Bars: Allow the bars to cool completely in the pan before removing.
  8. Prepare the Glaze: In a small bowl, mix the powdered sugar, pineapple juice, and vanilla extract to create a smooth glaze. If needed, adjust the consistency with a little more juice or powdered sugar.
  9. Glaze the Bars: Once the bars are cooled, drizzle the glaze over the top. Allow it to set before cutting the bars into squares.
  10. Serve: Slice into squares or bars and serve! Enjoy these moist and flavorful pineapple nut bars!

Tips:

  • Make sure to drain the pineapple well to avoid excess moisture in the batter.
  • You can substitute the nuts with your favorite kind, or omit them entirely if you prefer a nut-free version.
  • If you prefer a sweeter glaze, you can add a little extra powdered sugar.
