Crockpot Chili Recipe

Here’s a delicious and easy Crockpot Chili recipe:

Ingredients:

  • 1 lb ground beef (or turkey for a leaner version)
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juice
  • 1 can (6 oz) tomato paste
  • 1 can (4 oz) diced green chilies (optional for a bit of heat)
  • 1 cup beef broth (or chicken broth for a lighter version)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • ½ tsp ground cayenne pepper (optional for extra spice)
  • Salt and pepper, to taste

Optional toppings:

  • Sour cream
  • Shredded cheddar cheese
  • Chopped green onions
  • Fresh cilantro

Instructions:

  1. Brown the ground beef: In a skillet over medium heat, cook the ground beef, breaking it up with a spoon as it cooks. Once browned, drain any excess fat.
  2. Combine all ingredients in the Crockpot: Add the cooked beef, diced onion, bell pepper (if using), garlic, kidney beans, black beans, diced tomatoes, tomato paste, green chilies, beef broth, and all the spices to the Crockpot. Stir everything together until well combined.
  3. Cook the chili: Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the more the flavors will meld together.
  4. Taste and adjust: Once the chili is done cooking, taste and adjust the seasonings, adding more salt, pepper, or chili powder if needed.
  5. Serve: Ladle the chili into bowls and top with your favorite toppings such as sour cream, shredded cheese, green onions, or cilantro.

Tips:

  • For a richer flavor, you can sauté the onion, garlic, and bell pepper in a bit of olive oil before adding them to the Crockpot.
  • If you prefer a thicker chili, you can mash some of the beans before adding them or cook the chili uncovered for the last 30 minutes to let it thicken.
  • You can substitute the ground beef with ground turkey, chicken, or even a meat substitute for a vegetarian version.
