Here’s a simple and delicious recipe for Slow Cooker Pineapple Barbecue Meatballs:

Ingredients:

  • For the Meatballs:
    • 1 lb ground beef (or ground turkey for a lighter version)
    • 1/4 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1/4 cup chopped onion
    • 1 teaspoon garlic powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon chopped parsley (optional)
  • For the Sauce:
    • 1 cup barbecue sauce (your favorite variety)
    • 1/2 cup pineapple juice (from a can of pineapple)
    • 1/2 cup crushed pineapple (drained)
    • 1 tablespoon soy sauce (optional for extra flavor)
    • 1 teaspoon Worcestershire sauce (optional)

Instructions:

  1. Make the Meatballs:
    • In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, chopped onion, garlic powder, salt, pepper, and parsley (if using).
    • Mix everything together until fully combined.
    • Form the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should have around 20-25 meatballs.
  2. Prepare the Sauce:
    • In a separate bowl, mix together the barbecue sauce, pineapple juice, crushed pineapple, soy sauce, and Worcestershire sauce.
  3. Cook in the Slow Cooker:
    • Place the meatballs in the slow cooker.
    • Pour the pineapple barbecue sauce over the meatballs, ensuring they are evenly covered.
  4. Cook:
    • Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the meatballs are fully cooked and tender.
  5. Serve:
    • Serve the meatballs on their own, or with rice, mashed potatoes, or as an appetizer with toothpicks.
