Crockpot Meatloaf

Here’s a simple and delicious Crockpot Meatloaf recipe that you can make with minimal effort. The slow cooking helps to keep the meatloaf moist and tender.

Ingredients:

  • 1 lb ground beef (you can use turkey or a combination of ground beef and pork for a leaner option)
  • 1/2 cup breadcrumbs (you can also use oatmeal or crushed crackers)
  • 1/4 cup milk
  • 1 large egg
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian seasoning (or oregano)
  • 1/4 cup ketchup (for topping)
  • 1 tbsp brown sugar (optional, for topping)
  • 1 tsp mustard (optional, for topping)

Instructions:

  1. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning.
    • Mix everything together using your hands or a spoon until well combined.
  2. Shape the Meatloaf:
    • Transfer the meat mixture to a piece of parchment paper or plastic wrap and shape it into a loaf that will fit comfortably inside your Crockpot. You can lightly grease the Crockpot to prevent sticking if desired.
  3. Cook the Meatloaf:
    • Place the shaped meatloaf in the bottom of the Crockpot.
    • Cover with the lid and cook on low for 6-7 hours or on high for 3-4 hours. The meatloaf is ready when it reaches an internal temperature of 160°F (71°C).
  4. Make the Topping:
    • About 30 minutes before the meatloaf is done, mix together the ketchup, brown sugar, and mustard (if using).
    • Spread the ketchup mixture evenly on top of the meatloaf and continue to cook for the remaining time.
  5. Serve:
    • Once done, remove the meatloaf from the Crockpot and let it rest for a few minutes before slicing.
    • Serve with your favorite side dishes like mashed potatoes, vegetables, or a simple salad.
