Chewy coconut bars are delicious, sweet treats made primarily with coconut, sugar, and other ingredients to create a soft and chewy texture. Here’s a simple recipe to make them at home:

Ingredients:

  • 2 ½ cups shredded coconut (unsweetened or sweetened depending on preference)
  • 1 cup condensed milk (sweetened)
  • 1/2 cup sugar (optional, if you prefer it sweeter)
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour (optional, for a more structured bar)

Instructions:

  1. Preheat your oven: Set it to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Prepare the coconut mixture: In a large bowl, combine the shredded coconut, condensed milk, sugar (if using), melted butter, vanilla extract, and salt. Stir until the mixture is well combined. If you’re using flour, add it here to create a firmer texture.
  3. Press the mixture into the pan: Transfer the coconut mixture into the prepared baking dish and press it down evenly to form a compact layer.
  4. Bake: Place the pan in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the bars have set.
  5. Cool and cut: Remove from the oven and allow the bars to cool completely in the pan before cutting them into squares or rectangles.
  6. Serve and enjoy: Once cooled, enjoy your chewy coconut bars! Store any leftovers in an airtight container at room temperature for up to a week.
