Here’s a recipe for Savory Meatloaf with Caramelized Onion Gravy that brings together tender, flavorful meatloaf with a rich, sweet gravy.

Ingredients:

For the Meatloaf:

  • 1 lb ground beef (80% lean)
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 1/4 cup ketchup (for topping)

For the Caramelized Onion Gravy:

  • 2 tbsp butter
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tbsp all-purpose flour
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • Salt and pepper, to taste
  • 1 tbsp balsamic vinegar (optional, for added depth)

Instructions:

1. Prepare the Meatloaf:

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, chopped onion, minced garlic, egg, Worcestershire sauce, Dijon mustard, thyme, oregano, salt, and pepper. Mix gently until all ingredients are well incorporated, but don’t overwork the meat.
  • Shape the mixture into a loaf and place it in a greased baking dish or on a lined baking sheet.
  • Spread a thin layer of ketchup over the top of the meatloaf.
  • Bake for 1 hour or until the internal temperature reaches 160°F (70°C) and the meatloaf is browned on top.

2. Make the Caramelized Onion Gravy:

  • While the meatloaf is baking, melt butter in a large skillet over medium heat.
  • Add the sliced onions and cook, stirring occasionally, until the onions are soft and deeply golden brown, about 25–30 minutes. If needed, reduce the heat to avoid burning.
  • Add the minced garlic and cook for another 1-2 minutes.
  • Sprinkle the flour over the onions and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  • Gradually add the beef broth while stirring, ensuring the flour dissolves smoothly into the liquid.
  • Add thyme, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, until the gravy thickens slightly. If you’d like a richer flavor, add a tablespoon of balsamic vinegar for a touch of sweetness and depth.
  • Taste and adjust seasoning if needed.

3. Serve:

  • Once the meatloaf is done, let it rest for a few minutes before slicing.
  • Serve slices of the meatloaf topped with a generous amount of caramelized onion gravy.

This savory meatloaf is perfect when paired with mashed potatoes, roasted vegetables, or any other comforting side dish. Enjoy!
