Cajun Grilled Chicken with Alabama White Sauce

This recipe combines the spicy, smoky flavors of Cajun seasoning with the creamy tanginess of Alabama white sauce, creating a delicious contrast. Here’s how to make it:

Ingredients:

For the Cajun Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme (optional)

For the Alabama White Sauce:

  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional, adjust for heat)
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley (optional, for garnish)

Instructions:

Step 1: Marinate the Chicken

  1. In a small bowl, mix together the Cajun seasoning, garlic powder, smoked paprika, onion powder, salt, pepper, and thyme (if using).
  2. Coat the chicken breasts with olive oil, then rub the spice mixture all over the chicken, making sure it’s evenly coated.
  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to let the flavors soak in.

Step 2: Prepare the Alabama White Sauce

  1. In a bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, lemon juice, garlic powder, onion powder, cayenne pepper (if using), and salt and pepper to taste.
  2. Taste and adjust seasoning, adding more vinegar for tanginess or more mustard for depth.
  3. Cover and refrigerate until ready to serve.

Step 3: Grill the Chicken

  1. Preheat your grill to medium-high heat.
  2. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
  3. Once cooked, remove from the grill and let the chicken rest for a few minutes.

Step 4: Serve

  1. Slice the grilled chicken and drizzle generously with Alabama white sauce. Optionally, garnish with fresh parsley.
  2. Serve with your favorite sides such as grilled vegetables, rice, or a fresh salad.
