Here’s a delicious recipe for a Low-Carb Bacon Cheeseburger Casserole that’s perfect for those following a low-carb or keto diet. This dish combines the flavors of a bacon cheeseburger in a hearty casserole format.

Ingredients:

  • 1 lb ground beef (preferably 80/20 for flavor)
  • 6 slices of bacon, chopped
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 tablespoon mustard (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/4 cup chopped pickles (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cook the bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and set aside. Leave a small amount of bacon drippings in the pan.
  3. Cook the ground beef: In the same skillet with the bacon drippings, add the ground beef. Break it up with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat, if needed.
  4. Add onions and seasoning: To the beef, add the diced onion, garlic powder, onion powder, paprika, salt, and pepper. Cook for an additional 3-4 minutes until the onions become soft.
  5. Prepare the egg mixture: In a bowl, whisk together the eggs, heavy cream, and mustard (if using). Stir in half of the shredded cheddar cheese.
  6. Combine everything: In a greased 9×13-inch casserole dish, layer the cooked beef and bacon mixture. Pour the egg mixture evenly over the top. Sprinkle with the remaining cheddar cheese and mozzarella cheese.
  7. Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the casserole is set and the cheese is melted and bubbly.
  8. Serve: After baking, allow the casserole to cool for a few minutes before serving. Optionally, top with chopped pickles and fresh parsley for garnish.

Tips:

  • For extra flavor, you can mix in some chopped green onions or a bit of ranch seasoning.
  • This casserole can be made ahead and stored in the fridge for up to 3 days. You can reheat it in the microwave or oven.
