No-Bake Pineapple Coconut Bars

Here’s a simple recipe for No-Bake Pineapple Coconut Bars that are sweet, tropical, and easy to make!

Ingredients:

  • 1 ½ cups shredded coconut (unsweetened or sweetened)
  • 1 cup graham cracker crumbs
  • ½ cup powdered sugar
  • 1 (8 oz) can crushed pineapple (drained)
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Optional: extra shredded coconut for topping

Instructions:

  1. Prepare the Pan:
    • Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Mix the Dry Ingredients:
    • In a large mixing bowl, combine the shredded coconut, graham cracker crumbs, and powdered sugar. Stir well to combine.
  3. Add Wet Ingredients:
    • Add the drained crushed pineapple (make sure to squeeze out as much liquid as possible), sweetened condensed milk, and vanilla extract. Mix everything until it’s fully incorporated.
  4. Press into the Pan:
    • Transfer the mixture into the prepared pan. Press it down firmly to ensure it holds together well.
  5. Chill:
    • Place the pan in the refrigerator for at least 2 hours, or until the bars are set and firm.
  6. Serve:
    • Once chilled, cut into squares. If desired, sprinkle a little extra shredded coconut on top for garnish.
  7. Enjoy:
    • These bars are perfect for a tropical treat, and they don’t require any baking!

Tips:

  • If you prefer a slightly sweeter bar, you can add a little extra sweetened condensed milk or powdered sugar.
  • These bars can also be frozen. Just wrap them in plastic wrap and store them in an airtight container for up to a month.
