Here’s a simple recipe for a Pineapple Cream Cheese Pie that’s delicious and easy to prepare:

Ingredients:

  • For the crust:
    • 1 1/2 cups graham cracker crumbs (about 10 graham crackers)
    • 1/4 cup granulated sugar
    • 1/2 cup butter, melted
  • For the filling:
    • 8 oz cream cheese, softened
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 can (20 oz) crushed pineapple, drained (reserve juice)
    • 1 cup heavy whipping cream (chilled)
  • For topping (optional):
    • Extra whipped cream or cool whip
    • Pineapple chunks or extra crushed pineapple

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture into the bottom of a 9-inch pie dish, forming an even crust.
    • Bake for about 8–10 minutes, or until golden brown.
    • Remove from the oven and allow to cool completely.
  2. Prepare the filling:
    • In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
    • Add powdered sugar and vanilla extract, and continue mixing until smooth.
    • Stir in the drained pineapple (reserve a small amount of juice to use later if needed).
    • In a separate chilled bowl, beat the heavy whipping cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined.
  3. Assemble the pie:
    • Pour the cream cheese mixture into the cooled graham cracker crust and spread it out evenly.
    • Refrigerate the pie for at least 3 hours (or overnight) to allow it to set.
  4. Serve:
    • Before serving, top the pie with extra whipped cream, pineapple chunks, or some reserved pineapple juice if desired.
    • Slice and enjoy!
