Ingredients:

  • 4 medium-sized potatoes (Yukon Gold or Russet work well)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup or lightly grease it.
  2. Prep the Potatoes: Wash and peel the potatoes (optional). Slice the potatoes into about 1/4-inch thick rounds, similar to coins. Try to make them even in size to ensure uniform cooking.
  3. Season the Potatoes: In a large bowl, toss the potato slices with olive oil, garlic powder, onion powder, salt, black pepper, and lemon zest. Mix well to coat each slice evenly.
  4. Add Parmesan: Sprinkle the grated Parmesan cheese over the potatoes and toss again to evenly coat the potato slices with cheese.
  5. Arrange on Baking Sheet: Lay the potato coins flat on the prepared baking sheet, making sure they are in a single layer. This will ensure they cook evenly and get crispy.
  6. Bake: Place the baking sheet in the oven and bake for 25-30 minutes, flipping the potatoes halfway through. Bake until the potatoes are golden and crispy on the edges.
  7. Finish with Lemon Juice: Once the potatoes are done, remove them from the oven. Squeeze fresh lemon juice over the hot potato coins to give them a tangy kick.
  8. Garnish and Serve: Optionally, garnish with fresh parsley for color and added flavor. Serve hot!

Tips:

  • For extra crispiness, you can broil the potatoes for the last 2-3 minutes of baking. Just keep an eye on them to prevent burning.
  • Feel free to add other herbs like rosemary, thyme, or oregano to mix up the flavor.
  • These potato coins are great served with a dipping sauce such as ranch or garlic aioli.
