Mijito lime cheesecake

A Mojito Lime Cheesecake combines the refreshing flavors of a classic mojito cocktail with the creamy, indulgent texture of cheesecake. Here’s a recipe for making this delightful dessert:

Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon finely chopped fresh mint (optional)

For the cheesecake filling:

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 1 tablespoon lime zest (from 2 limes)
  • 2 tablespoons rum (white rum is preferred)
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 teaspoon vanilla extract

For the topping:

  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • Fresh mint leaves for garnish
  • Lime wedges for garnish

Instructions

For the crust:

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and chopped mint (if using).
  3. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
  4. Bake for 10 minutes, then remove from the oven and set aside to cool.

For the cheesecake filling:

  1. In a large bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
  2. Add sugar and beat until fully incorporated.
  3. Add the eggs one at a time, mixing after each addition.
  4. Add the sour cream, lime juice, lime zest, rum, and vanilla extract. Mix until smooth.
  5. Gently fold in the chopped fresh mint.
  6. Pour the cheesecake batter into the cooled crust.
  7. Bake the cheesecake for 55-65 minutes, or until the edges are set and the center is slightly jiggly.
  8. Let the cheesecake cool at room temperature for about an hour, then refrigerate for at least 4 hours (or overnight).

For the topping:

  1. In a medium bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  2. Once the cheesecake is fully chilled, spread the whipped cream over the top.
  3. Garnish with fresh mint leaves and lime wedges.

Serving:

Serve the Mojito Lime Cheesecake chilled, and enjoy the combination of refreshing lime, mint, and creamy cheesecake.
