Here’s a delicious recipe for Cinnamon Apple Muffins that combines the sweet taste of apples with the warm, comforting flavor of cinnamon. These muffins are perfect for breakfast or as a snack!

Cinnamon Apple Muffins Recipe

Ingredients:

  • For the Muffins:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup sugar
    • 1/4 cup brown sugar, packed
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1 tsp ground cinnamon
    • 1/2 tsp salt
    • 1/2 cup unsalted butter, melted
    • 1/2 cup buttermilk (or regular milk)
    • 1 large egg
    • 1 tsp vanilla extract
    • 1 1/2 cups apples, peeled, cored, and chopped (about 1 medium apple)
  • For the Cinnamon Sugar Topping:
    • 2 tbsp granulated sugar
    • 1 tsp ground cinnamon

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Mix the dry ingredients:
    In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Prepare the wet ingredients:
    In a separate bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract until combined.
  4. Combine wet and dry ingredients:
    Pour the wet ingredients into the dry ingredients and stir gently with a spatula or spoon until just combined. Be careful not to overmix.
  5. Add the apples:
    Fold in the chopped apples until evenly distributed throughout the batter.
  6. Scoop the batter:
    Divide the muffin batter evenly between the muffin cups, filling each about 2/3 full.
  7. Prepare the topping:
    In a small bowl, mix together the granulated sugar and cinnamon for the topping. Sprinkle the mixture generously over the top of each muffin.
  8. Bake the muffins:
    Bake the muffins for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown.
  9. Cool and serve:
    Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!

These cinnamon apple muffins are soft, fluffy, and full of warm spice. You can store them in an airtight container for up to 3 days or freeze them for later enjoyment.
