Creamy Beef Taco Soup

Creamy Beef Taco Soup is a hearty and flavorful soup that combines the delicious flavors of tacos with a creamy broth. It’s a comforting dish that’s perfect for a chilly day. Here’s a simple recipe to make Creamy Beef Taco Soup:

Ingredients:

  • 1 pound (450 grams) ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1.25 ounces) taco seasoning mix
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • Optional toppings: sliced green onions, diced tomatoes, sour cream, shredded cheese, chopped cilantro, and crushed tortilla chips

Instructions:

  1. Brown the Ground Beef:
    • In a large soup pot or Dutch oven, cook the ground beef over medium-high heat until it’s browned and crumbled. Drain any excess fat if necessary.
  2. Sauté the Onion and Garlic:
    • Add the chopped onion to the cooked beef and sauté for about 2-3 minutes until the onion becomes translucent. Stir in the minced garlic and cook for another 1 minute.
  3. Season with Taco Mix:
    • Sprinkle the taco seasoning mix over the beef and onion mixture. Stir well to evenly coat the meat and onions with the seasoning.
  4. Add Tomatoes, Beans, and Corn:
    • Add the diced tomatoes (with their juice), drained black beans, and drained corn kernels to the pot. Stir to combine.
  5. Pour in Beef Broth:
    • Pour in the beef broth and stir to incorporate all the ingredients. Bring the soup to a simmer.
  6. Simmer:
    • Reduce the heat to low, cover the pot, and let the soup simmer for about 10-15 minutes to allow the flavors to meld and the soup to thicken slightly.
  7. Add Heavy Cream:
    • Pour in the heavy cream and stir it into the soup. Simmer for an additional 5 minutes, or until the soup is heated through.
  8. Stir in Shredded Cheese:
    • Gradually add the shredded cheddar cheese to the soup, stirring until it’s fully melted and the soup becomes creamy. Season with salt and black pepper to taste.
  9. Serve:
    • Ladle the Creamy Beef Taco Soup into bowls.
  10. Garnish:
    • Top each bowl with your choice of optional toppings, such as sliced green onions, diced tomatoes, sour cream, more shredded cheese, chopped cilantro, and crushed tortilla chips.
